This is Chorizo’s younger brother and, therefore, both the ingredients as well as the selection of meat cuts are carefully chosen. The difference resides in that it is more finely minced and the natural casing in which it is stuffed has a slighter size. Its curing period is also shorter. This fact, which rather than deter from its quality enhances it, actually makes the Vela Chorizo a product with a smoother flavour and with all the properties of home-made sausage meat that has always been enjoyed.
