Ibérico Pork Crown Roast with Caramelized Apples and Mustard Sauce

Serves 4 - Difficulty: Moderate

Time: Mise en place:

Ingredients (4 Portions):

- 1,2 kg. Ibérico Crown Ribs
- 350 gr. Casan Crem
- 1 tablespoon de Parsley
- 50 gr. Sugar
- 3 Tablespoons of mustard
- 30 gr. Butter
- Sunflower oil
- 2 Granny Smith apples

Preparation:

1º - Preheat oven to 200ºC.
2º - Heat a frying pan with a little bit of oil. Cut the pork ribs into four pieces. Season the 4 pieces with salt and pepper and sear 3 minutes on each side. Put the pork ribs into an oven pan and roast in the 200ºC preheated oven for 20 minutes.
3º - Chop the apples into sixths. Meanwhile heat a frying pan and add the butter and the chopped apples and sear them for 3 minutes on each side. Add the sugar and let it all caramelize.
4º - Heat the CasanCrem in a pot, add the mustard and parsley. Set aside and keep it warm.
5º - Serve the ribs with the apples, potato mash or roasted potatoes and cover with a spoonful of sauce. Serve and enjoy.
