- 1 Ibérico Loin (Whole piece)
- 3 Cups orange juice
- 4 Garlic cloves
- ½ Onion
- 2 teaspoons Oregano
- 2 tablespoons of Worcestershire Sauce
- 4 tablespoons Sugar
- 5 tablespoons Oil
- White Pepper
1º - Salt and pepper the loin and massage it with olive oil, adding the garlic, onion and oregano previously blended in a food processor. Allow the loin to marinate for 1 hour.
2º - In a sizzling hot frying pan sear the meat on all sides until it is golden. Once seared and sealed throughout, lower the temperature by half and add the remaining ingredients to the frying pan. Cover it and let it simmer for about 20 minutes.
3º - Once finished take the loin out of the frying pan. Leave the juices in the frying pan and simmer until the sauce thickens and turns glossy.
4º - Slice the loin thinly and add the sauce. Serve and enjoy.
